Pour sauce into 9x13 pan. "Bread" chicken with parmesan and place on sauce, filling the pan completely. Bake for 20 minutes. Remove from oven, increase temp to 475. Top chicken with mozarella and pepperoni, bake for additional 5 minutes or until chicken is done.</p><p><br /></p><p>The original recipe had you make your own sauce, but I like the convenience of jarred. Dough will be very dry and crumbly, but press until dough forms with pan.. Bake at 325 for 20 minutes or until edges are browned. Take out and let cool entirely. Cut into strips and store in snack size bags.<br /><br />**If the dough is very dry, add a couple of tablespoon of water to help mix it all together and you might need to use your hands to get it mixed up and pressed into the pan.<br /><br />* My sister in law threw in 1/2 c peanut butter the second time she made them and said it was really good.</div>

They invented these special poles that you wrap a biscuit around, cook your biscuit over the fire into a little cup, and then fill with pie filling and top with whipped cream. Yum! Yeah! These turned out <i>fantastic</i> (and I have had the worst luck with rolls!).<br />

I know we've got <a href="http://heyheygoodlookin.blogspot.com/2008/09/homemade-rolls.html">another great dinner roll recipe already on this blog</a>, but in case you need <i>another</i> really great one in your lives, you will be so happy with this one!<br />
<br />
3 1/2 c. warm water<br />
3/4 c. sugar or 1/2 c. honey<br />
1 c. oil<br />
6 T. yeast (9 packages)<br />
1 T. salt<br />
10 1/2 c. flour<br />
3 eggs<br />
<br />
Mix water, sugar, oil, and yeast. Let rest and get all for foamy for 15 minutes. Add salt, flour, and eggs. Mix ingredients thoroughly, then knead till dough shines (around 10-15 minutes).<br />
<br />
Shape immediately into dinner rolls. Place on cookie sheet that has been lined with tin foil. Cover with a clean cloth and let rest 10 minutes.<br />

For the crust, crush 1 package of graham crackers. Combine with 1/4 c melted butter. Push down flat in the bottom of a 9x13 pan.<br />

For the second layer, whip up 1 pint whipping cream.<br />

1 c powdered sugar<br />
Combine with the whipped cream.<br />

For the top layer, slice up 2 pounds of fresh strawberries. Combine with one container of strawberry glaze (the only brand I've ever found at the store is Marie's).<br />

Refrigerate until ready to serve! Serve with some Spanish rice and/or beans and you've got absolute yumminess!<br /><br />Chicken Enchiladas<br /><br />3 Tbls. cooking oil (I use canola)<br />1 1/2 lbs. boneless, skinless chicken breasts<br />Salt and pepper to taste<br />2 tsp. cumin powder<br />2 tsp. garlic powder<br />1 tsp. Mexican Spice Blend<br />1 red onion, chopped<br />2 cloves garlic, minced<br />1 cup frozen corn, thawed<br />1 small can diced green chiles<br />4 canned chipotle chiles, seeded and minced (adjust to your taste preference)<br />1 28-oz. can stewed tomatoes (I substituted a 14-15 oz. can of tomato sauce)<br />1/2 tsp. all-purpose flour<br />Corn tortillas (the original recipe calls for 16, I get about 12 when I make them)<br />1 large can of enchilada sauce<br />1 cup shredded Cheddar and Jack cheeses<br />Garnish: Chopped cilantro leaves, chopped scallions, sour cream, chopped tomatoes<br /><br />Directions:<br /><br />Preheat oven to 350 degrees.<br /><br />Coat large saute pan with oil. Season chicken with salt and pepper. Brown chicken over medium heat, for about 7 minutes per side or until no longer pink. Sprinkle chicken with cumin, garlic powder, and Mexican Spice before turning. Remove to a platter and allow to cool.<br /><br />Saute onion and garlic in chicken drippings until tender. Add corn and chiles. Stir well to combine. Add canned tomatoes, saute 1 minute.<br /><br />Pull chicken breasts apart by hand into shredded strips and add to saute pan, combine with vegetables. Dust the mixture with flour to help set.<br /><br />Microwave tortillas on high for 30 seconds (I do 4 at a time for about 20 seconds, fill and then continue with another 4 tortillas). This softens them and makes them more pliable. Coat the bottom of 2 13x9-inch pans with a ladle of enchilada sauce. Using a large, shallow bowl, dip each tortilla into enchilada sauce to lightly coat (I sometimes skip this step to save time). Spoon 1/4 cutp of chicken mixture into each tortilla, roll up and place seam-side down into prepared pans. Top with remaining enchilada sauce and cheese.<br /><br />Bake for 15 minutes until cheese melts. 8 quarts popped popcorn (approx. 4 bags)<br />
2 1/2 C packed brown sugar<br />
1 can Eagle Brand condensed milk<br />
1/2 tsp. Vanilla<br />

Pop your popcorn and pick out the un-popped kernels. Set aside.<br />

In medium sauce pan combine syrup, butter, brown sugar and condensed milk. Bring to a boil, stirring constantly. Simmer a full ten minutes stirring constantly.<br />

Remove from heat and stir in vanilla.<br />

Pour over prepared popcorn.<br />

This makes a lot of popcorn, so I divide the popcorn up into a couple different bowls so that I don't make such a big mess when mixing the caramel in. I also use a silicone spatula to mix.<br />

They have all my favorite things in them!<br /><br />1/3 C Cream Cheese<br />1/4 C salsa verde<br />1 tbsp fresh lime juice<br />1/2 tsp cumin<br />1 tsp chili powder<br />1/2 tsp onion powder<br />1/4 tsp granulated garlic<br />3 tbsp chopped cilantro<br />2 T sliced green onions<br /><br />2 C shredded cooked chicken<br />2 C grated pepper jack cheese<br /><br />small corn tortillas<br />kosher salt<br />cooking spray<br /><br />Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.<br /><br />Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add salsa verde, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.<br /><br />Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or come unrolled right away, just try heating them longer and try the paper towel thing.<br /><br />Place 2-3 tbsp of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.<br /><br />Then roll it up as tight as you can.<br /><br />Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other.
