Woofums

Our friends Jacob and Rachel have this seriously good camping treat they make called woofums. They invented these special poles that you wrap a biscuit around, cook your biscuit over the fire into a little cup, and then fill with pie filling and top with whipped cream. Yum! Well sometimes I want woofums but don't have the special poles to make them, so I invented a way to get something close at home.

I wrapped biscuits over a mini muffin tin and baked them in the oven at 400 for about 10 minutes.

They came out looking like this:

Then I loaded them up with cherry pie filling, whipped cream, and voila! You could also go with apple pie filling, strawberry...the options are endless!

Farmer's Casserole

This is one of my favorite breakfast dishes. Sorry I dont have any pics.

Layer the ingredients in a baking dish the night before. then cover and refrigerate.  In the morning, pop the casserole into the oven about an hour before serving.

3 cups frozen shredded hash brown potatoes
3/4 cup shredded Monterey Jack cheese with jalapeno peppers or shredded cheddar cheese (3 oz)
1 cup dived fully cooked ham or canadian bacon
1/4 cup sliced green onion
4 beaten eggs
1 12-oz. can evaporated milk (1 1/2 cups)
1/4 tsp. pepper
1/8 tsp. salt

Grease a 2-quart square baking dish.  Arrange potatoes evenly in the bottom of the dish.  Sprinkle with cheese, ham, and green onion.

In a medium mixing bowl combine eggs, milk, pepper, and salt.  Pour egg mixture over potato mixture in dish.  (the dish may be covered and refrigerated at this point for several hours or overnight)  Bake, uncovered, in a 350 degree oven for 40 minutes to 45 minutes (or 55 to 60  minutes if made ahead and chilled) or till center appears set.  Let stand 5 minutes before serving.  Makes 6 servings

Hootenanny Pancakes

Admit it, the name is so fun you want to make these!
6 eggs
1 c. milk
1 c. flour
pinch of salt
stick of butter

Preheat oven to 450. Mix the eggs, milk, flour, and salt in blender to a creamy, frothy batter. Melt the stick of butter in a 9x13 in the oven until it bubbles. Pour the batter into the pan of melted butter, but don't stir. Place the pan in the oven for 15 mins (Mine took a couple mins extra--I think it's the gas oven). Don't open oven while baking. Serve with syrup, strawberries and whipped cream if you'd like!

O.k., so I'm sort of embarrassed that my first post on here is such an easy recipe, but it's a good, quick breakfast with ingredients you most likely already had. These are like an easier version of german pancakes. When taken out of the oven it looks really blown up all along the edges. Tim loves these and remembers that his dad used to make them.

"Deceptively Delicious" Pancakes

I got this great cookbook for Christmas called "Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food". It is the coolest book because it actually has secret ingredients! We tried out the pancakes with hidden sweet potatoes and they were REALLY Good! Here is the recipe! Here is a picture of what the "cook's" looked like... and then a picture of mine! We had break fast this morning, and had a vegetable and two fruits while eating pancakes... a good way to start the new year!

1 Cup Water
1/2 Cup Sweet Potato Puree (Shh!!! Don't tell.)
1/4 teaspoon cinnamon or pumpkin pie spice (optional)
1 Cup pancake mix
Nonstick cooking spray
1 tablespoon canola or vegetable oil
Pure maple syrup, for serving

Directions:
1. In a large bowl, mix the water, sweet potato puree, and cinnamon or pumpkin pie spice, if using.  Add the pancake mix and stir just to combine the batter-should be lumpy.
2. Coat a griddle or large nonstick skillet with cooking spray and set it over medium-high heat. When the pan is hot, add the oil, and spoon the batter onto the griddle or pan, using 1/4 cup batter for each pancake.
3. Cook until bubbles form on top of the pancakes and the batter is set, 2 to 3 minutes.  Then use a spatula to flip the pancakes and cook them until golden brown on the other side, 2 to 3 minutes.

Whole Wheat Pancakes with Orange Syrup and Pecans

I don't know where this recipe came from, but I grew up with it, and it is my kids' favorite breakfast. They are always so excited when I make it. Of course, you can make the pancakes with white flour, too, but I prefer the texture of the whole wheat pancakes with the pecans and orange syrup. The syrup is also great on waffles. Enjoy!

Ingredients:
1 ¼ c. flour (whole wheat is great!)
1 T. baking powder
1 T. sugar
½ t. salt
1 egg
1 c. milk
2 T. oil

Orange Syrup:
½ c. concentrated frozen orange juice
1 cube butter
1 c. sugar

Method:
1. Mix together dry ingredients
2. Mix together wet ingredients and add to flour mixture.
3. Mix just until moist.
4. (For buttermilk pancakes, add ½ t. baking soda, reduce baking powder to 2 t. and substitute buttermilk for milk.)
5. Cook on griddle

Method for Syrup:
1. Mix and stir all ingredients over heat until melted, but don't boil.
2. Serve warm with toasted chopped pecans

4 Minute Monkey Bread

1 cup refrigerated biscuits
4 tbsp butter
1/4 cup brown sugar
1/2 tspn cinnamon

(If you like nuts, you can put the nut of you choice in as well.)

Instructions:
Cut refrigerated biscuits in quarters. Put butter in round cake dish and microwave 1 min. 30 sec. until butter is melted. Stir in brown sugar and cinnamon, put refrigerated biscuits on top, mix so buttery mixture is all over biscuits. Microwave for 3-4 minutes.

So good... and so fast. Husbands love this when you have this for them in the morning. They think you slaved away in the kitchen early Saturday morning, when really you got up 5 minutes before.... sneaky and delicious!
